The results showed that after a week of consuming black rice, the participants exhibited improvements in verbal and working memory, as well as a decrease in interleukin-6 levels—a marker of chronic inflammation associated with age-related cognitive decline. Experts believe that the anti-inflammatory effects of anthocyanins—natural pigments that give black rice its dark color—play a key role in this process.
