By 2050, the implementation of cutting-edge potato storage technologies will enable the provision of food for an additional 2 billion people. Future storage facilities are expected to reduce product losses, cut greenhouse gas emissions, and significantly enhance the efficiency of storing one of the planet’s most important crops. The author emphasizes that engineers are already testing fractal air channels that provide +25% oxygen in storage facilities, as well as using phase change materials (PCM) and aerogels to reduce peak energy consumption by 40%. Additionally, artificial intelligence predicts potato rot processes with 98% accuracy, allowing for more rational storage planning and reduced losses.

The Future of Potato Storage and Its Impact

According to forecasts, if these technologies are implemented in all countries, by mid-century over 90% of potato storage facilities will become “smart,” corresponding to a volume of about 325 million tons. This will reduce losses to 10 million tons per year (currently they are tens of times higher) and decrease CO₂ emissions by 50 million tons. Such achievements will ensure stable food supply for the world’s population, which is projected to grow to 9.7 billion people by 2050.

In 2023, 359 million tons of potatoes were grown worldwide, accounting for 19% of the caloric intake in developing countries.
