Ingredients for Cabbage Rolls
To prepare cabbage rolls without meat, you will need the following ingredients:
- 1 medium head of cabbage,
- 1 cup of rice (or bulgur, buckwheat),
- 200 g of mushrooms (champignons, oyster mushrooms, or wild mushrooms),
- 1 carrot,
- 1 onion,
- 2 cloves of garlic,
- 2 tbsp of oil,
- Salt, pepper, paprika, and herbs to taste.
Preparation
For the sauce, you will need:
- 500 ml of tomato juice or 3 tbsp of tomato paste + 400 ml of water,
- 1 tbsp of soy sauce (optional),
- 1 tsp of sugar,
- 1 bay leaf.
Start by preparing the cabbage: immerse the head in boiling water for 5 minutes to soften the leaves. Carefully remove the leaves. For the filling, cook the rice until semi-done. Peel, chop, and sauté the onion and carrot in oil until soft. Add the finely chopped mushrooms and simmer until the moisture evaporates. Then mix with the rice, season with salt and pepper.
Place the filling on each cabbage leaf, fold the edges, and roll it up. Arrange in a pot or baking dish. To prepare the sauce, mix the tomato juice, soy sauce, sugar, and bay leaf in a bowl. Pour the sauce over the cabbage rolls so that they are almost completely covered.
Cover with a lid and simmer on low heat for 40-50 minutes or bake in the oven at 180°C for about 50 minutes. Serve the finished cabbage rolls hot, garnished with fresh herbs.
