Export and Domestic Demand for Frozen Vegetables and Berries Reach Record Levels
The frozen fruit and vegetable segment in Ukraine is gradually becoming a strategically important area for producers, traders, processors, and retailers. It is no longer just an alternative to fresh products, but a distinct market with its own demand structure, logistics, and pricing. At the same time, the issue of the nutritional value of frozen vegetables, fruits, and berries remains a subject of public discussion, shaping consumer preferences and influencing sales levels.

Advantages of Shock Freezing for the Industry
As nutritionist Iryna Melnychенко notes, industrial freezing of vegetables, berries, and fruits is typically carried out immediately after harvest when the products reach optimal ripeness. This involves the use of shock freezing (IQF) technology, which helps preserve the maximum amount of vitamins and minerals. This approach distinguishes industrial products from home freezing and often provides better nutritional value than fresh fruits that are transported for long periods to consumers.
Thus, frozen vegetables, berries, and fruits are a full-fledged alternative to fresh products, especially during the off-season when market choices are limited.
Factors Driving the Growth of the Frozen Vegetable and Berry Segment
- Stable Quality and Predictability. Modern freezing technologies minimize the impact of weather fluctuations and seasonal risks, providing traders and processors with a stable raw material base.
- Convenience for HoReCa and the Processing Industry. Frozen products arrive already cleaned, cut, and sorted, significantly reducing waste, labor costs, and meal preparation time. This is why this segment is actively developing in professional kitchens.
- Year-Round Variety. Thanks to freezing, access to vegetables and berries that are only available fresh for a few weeks a year becomes possible in any season. This is especially important for retailers and companies focused on export.
- Economic Efficiency. In the off-season, frozen products often have a more favorable price, longer shelf life, and lower spoilage rates compared to fresh products.
Storage and Quality Requirements
For professional market participants, adherence to frozen product storage standards is extremely important, as it directly affects the final quality:
- maintaining the appropriate temperature regime at all stages of logistics;
- using airtight packaging to prevent dehydration and oxidation;
- strict separation of frozen plant products and raw animal materials;
- controlled thawing process exclusively under refrigeration conditions;
- categorical prohibition of refreezing, as this significantly deteriorates product quality and increases risks to consumer safety.
Frozen vegetables, berries, and fruits are not a “secondary” segment, but an important tool for market stabilization, reducing losses, and creating added value. In the face of climate risks, logistical challenges, and rising costs, freezing is becoming one of the key areas for the development of the fruit and vegetable business in Europe and Ukraine. For producers and traders, this means one thing: working with the frozen segment is no longer a trend, but a necessity.
