How to Properly Sow Beets for Winter: Tips for Winter Sowing and Variety Selection

Winter sowing of beets, similar to onions, garlic, or carrots, is becoming increasingly popular among gardeners as it allows for an early and juicy harvest by the beginning of July. Although this method has certain risks, experienced farmers note its significant advantages and share tips for the proper approach to winter sowing of beets.

Advantages and Risks of Winter Sowing Beets

The main advantage of winter sowing is the ability to harvest early, providing fresh root vegetables by early summer. The sprouts that emerge after winter sowing are more resilient to spring frosts, and the yield is usually healthy and abundant. Additionally, this method saves time on spring work and allows the freed-up area to be used for other crops after harvesting the beets.

Along with the advantages, there are also significant risks. The most crucial factor is to determine the right time for sowing, as the work is only carried out in well-frozen soil (from −4 to −5°C). If the temperature rises to +4…+5°C, the seeds may germinate prematurely and not survive the winter. Also, incorrect variety selection can lead to bolting, and early sprouts may perish in the event of a cold spring or flooding from melting snow.

Choosing a Variety and Optimal Conditions for Winter Sowing

For winter sowing, it is recommended to choose special cold-resistant, early-maturing beet varieties that are not prone to bolting. Among them are varieties such as Bordeaux, Ataman, Monocle, Cadet, Winter, and others. It is also important to select the right location for sowing—beets do not grow well in shaded areas. To achieve a good harvest, it is essential to follow crop rotation: beets yield better results after onions, potatoes, tomatoes, or cucumbers, and should not be sown after cabbage, carrots, or consecutively after beets.

The soil for beets should be fertile and neutral or slightly alkaline in acidity. Beets grow poorly in acidic soils, so they should be limed in advance, for example, by adding lime a month and a half before sowing, or using wood ash or dolomite flour just before sowing.

Sowing Dates depend on the region. In the central regions of Ukraine, beets for winter are usually sown in late November or even in December. A mandatory condition is that the soil temperature must be between −2 and −5°C, and the daytime air temperature should not exceed +2°C.

Preparing the Plot and Sowing Technology

Since sowing is done in frozen soil, bed preparation begins in advance. Furrows 3–4 cm deep with a distance of 25 cm between them are formed ahead of time and compacted. It is also necessary to have a supply of dry soil, compost, sand (for heavy soils), ash, or dolomite flour for liming—these should be stored in a warm place. At the bottom of the furrows, ash (as a source of potassium and phosphorus) and about 1 cm of sand are added to improve aeration and avoid water stagnation.

After the soil has sufficiently frozen, sowing begins: seeds are used dry, without additional treatment. They are sown with an interval of 3–4 cm, covered with a mixture of dry soil, sand, and compost, and then gently compacted. Watering the bed after sowing is not allowed.

After sowing, the bed should be mulched with a layer of 3–4 cm of well-rotted compost, manure, straw, or fallen leaves. It is advisable to cover the straw or leaves with branches (for example, fir branches) to prevent them from being blown away by the wind and to promote snow retention.

In spring, when the soil begins to warm up, the mulch is removed. To protect young sprouts from possible frosts, the bed is covered with agrotextile or film, stretched over special hoops.

Thus, timely sowing and adherence to all agronomic conditions will ensure an early, juicy, and abundant harvest of red beets.
