Niche vegetables in Ukraine can become a significant source of profit for farmers if the right crop is chosen and the growing process is organized properly. In particular, asparagus, artichokes, and saffron are considered promising segments for the development of vegetable farming.

Prospects for growing asparagus in Ukraine
The demand for asparagus among Ukrainian consumers is growing; however, the areas dedicated to this crop remain small — less than 500 hectares across the country. In comparison, China has over 65,000 hectares dedicated to asparagus, making it the world leader in this field.
“I know about asparagus not from hearsay; in Cherkasy region, I have planted a 20-hectare plot with underground drip irrigation under my supervision. I also have my own project ‘Asparagus Estate’, where I grow not only asparagus but also artichokes, saffron, and sweet potatoes. Here, you can purchase seedlings of these crops to grow your own delicious and healthy produce,” said Pavlo Bulgakov.
The expert emphasizes that the development of the asparagus sector in Ukraine is necessary, and increasing the area under this crop will help meet the growing domestic demand and provide new export opportunities.
Artichokes, saffron, and other niche crops
In addition to asparagus, a promising direction is the cultivation of artichokes. This vegetable is valued not only in cooking but also in the pharmaceutical industry and floristry. Another interesting crop for farmers is saffron — known as a valuable spice and spring crocus flower. Saffron not only beautifies the area but also has beneficial properties, including helping to prevent cancer.
