Recent years have been among the most turbulent in the coffee industry. This is reflected not only in the changing prices of coffee beans. Experts from Idealist Coffee & Co. have shared five key trends that are already shaping the future of the coffee industry.

Ready-to-Drink Coffee Beverages

Ready-to-Drink beverages are rapidly gaining popularity worldwide. If in 2022 the global RTD market was valued at $12.6 billion, it is projected to at least double by 2031. People are choosing ready-made coffee because it is quick, convenient, and does not compromise on taste.

  • cold brew
  • coffee tonics
  • lemonades
  • dairy and plant-based variations in cans or bottles

These beverages will increasingly be seen in coffee shops and on retailer shelves.

Decaffeinated Coffee

According to data from 2024, nearly half of coffee consumers wanted to consume less caffeine or eliminate it altogether. This figure is only increasing each year. Consumers are becoming more mindful of caffeine’s impact on sleep, the nervous system, and overall well-being. As a result, interest in decaf is growing. Almost every Ukrainian roaster now offers decaffeinated coffee. In particular, Idealist consistently has several options available, both in beans and in drips.

Automation and Artificial Intelligence

Modern technologies are changing how coffee gets into the cup.

  • Automated coffee machines
  • Smart grind and extraction settings
  • Algorithms that help maintain a consistent roasting profile
  • Programs to optimize workflows in establishments and production facilities

All of this makes quality coffee more accessible.

New Flavors Through Processing Experiments

Farmers and producers are increasingly bold in experimenting with coffee bean processing. Thanks to various fermentation methods, coffee acquires new or more intense flavors: tropical fruits, berries, spices, or wine — without any flavorings. Thermal shock, fermentation with yeast, infusions — these are just some of the experimental innovations we are currently seeing in the offerings of Ukrainian coffee producers to satisfy consumer demand for interesting and diverse coffee.

Sustainability as the New Norm

People are increasingly choosing brands that care about the environment and have an active social stance. Sustainability in coffee means responsible cultivation, fair wages, eco-friendly packaging, transparent product origins, and participation in important initiatives.

Coffee in 2026 is not just about taste, but also about the values behind each cup
